Mint White Chocolate Meringue Cookies
Yields: 2-3 dozen cookies depending on size of cookies
Ingredients
- 2 large egg whites
- 1/4 teaspoon cream of tartar
- 2/3 cup sugar
- 1 cup white chocolate chips
- 1/4 teaspoon mint extract
- 2-3 drop green gel food coloring
Instructions
- Preheat oven to 275 degrees Fahrenheit.
- Finely chop white chocolate chips and set aside.
- In large mixing bowl, with mixer on high, beat egg whites and cream of tartar until foamy. Gradually add sugar and mix until mixture holds stiff peaks.
- With spatula, stir in mint extract, finely chopped white chocolate chips, and food coloring.
- Spoon meringue onto a parchment paper covered baking sheet.
- Bake for 30 minutes. Let cool for 3-5 minutes on sheet before transferring to cooling racks.
