Mint White Chocolate Meringue Cookies
Yields: 2-3 dozen cookies depending on size of cookies
Ingredients
2 large egg whites
1/4 teaspoon cream of tartar
2/3 cup sugar
1 cup white chocolate chips
1/4 teaspoon mint extract
2-3 drop green gel food coloring
Instructions
Preheat oven to 275 degrees Fahrenheit.
Finely chop white chocolate chips and set aside.
In large mixing bowl, with mixer on high, beat egg whites and cream of tartar until foamy. Gradually add sugar and mix until mixture holds stiff peaks.
With spatula, stir in mint extract, finely chopped white chocolate chips, and food coloring.
Spoon meringue onto a parchment paper covered baking sheet.
Bake for 30 minutes. Let cool for 3-5 minutes on sheet before transferring to cooling racks.
